Hey everyone, I made this amazing burrito bowl recipe yesterday and it was so yummy, that I have to share it.
- 1 pound of ground beef
- Half an onion chopped
- 1 can of corn drained
- 1 can of black beans drained and rinsed
- 1 can of kidney beans drained and rinsed
- 1 can of rotel
- 1 packet of taco seasoning
- 1 packet of ranch seasoning
- 1 cup of rice.. I used brown rice
- Chicken or beef broth
Brown the ground beef and onions, drain grease. Add all ingredients and cover in the broth. Simmer and stir occasionally, so it doesn’t burn. Once the rice is cooked, its ready to serve. If all the liquid cooks off and the rice is still not cooked all the way, just add more broth or water.
I added cheese and sour cream to mine. Only 341 calories without the topping and its so yummy.
